Hot. Peachy. Crumble.

Boredom + random bag of frozen peaches that I found from last season = delicious Peachy Crumble. Do it.

That drip tho… mmm….

Peachy part:

  • 1 quart-sized bag of frozen sliced peaches (partially thawed)
  • 2 Tablespoons of your favorite sweetener (I like coconut sugar)
  • 3 Tablespoons of tapioca starch
  • 1 teaspoon lemon juice
  • Sprinkle of cinnamon

Crumbly Part:

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour*
  • 1/2 teaspoon salt
  • 1/3 cup packed brown sugar
  • Sprinkle of cinnamon
  • 1/3 cup solid coconut oil (pop it in the fridge if need be)

Do it:

In a medium-sized bowl toss all the ingredients for the peachy part together until the peaches are evenly coated with goodness. Set aside. Whisk the oats, flour, salt, cinnamon, and sugar together in another medium-sized bowl. Add the solid coconut oil and smash it into the oat mixture with a pastry cutter or fork until there are little pieces of coconut oil throughout all the crumbly topping.

Spoon the peachy part evenly into 5 large ramekins or into your favorite oven-safe dish. Sprinkle the crumbly topping evenly over the peachy part. Bake at 375F for 20-25 minutes or until the peaches bubble and the topping is nice and brown.

Serve hot with sweet cream, ice cream, or as its own independent self. Enjoy…

*Note: I’ve had good luck with subbing the all-purpose flour for Bob’s Red Mill GF 1-to-1 baking flour.
